breakfast criminals: chia oat pitaya smoothie bowl

We know. It’s not easy to stick to eating foods that leave you feeling full of energy during the steady stream of delicious holiday dinners, drinks and parties. One meal that most of us can control, however, is breakfast.
We’re big fans of starting each day with a superfood meal. It provides the perfect boost of energy and makes it easier to resist cravings during the day. And when we discovered Ksenia of Breakfast Criminals on Pinterest, her beautiful images made our mouth water. So we tracked her down, and sweet-talked her into sharing some of her favourite breakfast recipes with us.
Most of them are vegan, raw-friendly and gluten free—or can be easily modified to be. And while they may look elaborate, these meals don’t take much more than 10 minutes to make (plus the soaking time). But when your friends pop by for brunch, we recommend pretending it took hours and lavishing all the compliments.
CHIA OAT PITAYA SMOOTHIE BOWL
raw, vegan, gluten-free, soy-free, sugar-free
Soak overnight in glass jar:
1/3 cup gluten free rolled oats
3 tbs chia seeds
1/2 cup water
Blend on high speed:
1 Pitaya (dragon fruit) smoothie pack (I use Pitaya Plus)
2/3 ripe banana
1 inch ginger
1 slice lemon with zest
1 tbs maca
1 tsp spirulina
2/3 cup almond milk
1/3 cup berries (I used raspberries and blueberries)
2 tbs goji berries
1 tbs almond butter
1 tbs raw cacao nibs
This smoothie bowl is full of antioxidants, vitamin C, calcium, digestive enzymes, omega 3-s, calcium & magnesium, healthy fats, fibre and iron.
It boosts your immunity, digestion, increases appetite-controlling hormones, supports bone and teeth health, stabilizes blood sugar and improves heart health. Bonus: anandamine, a lipid found in cocoa nibs, is also known as ‘the bliss molecule.’
